Meatless meals for meat lovers

Ok, so lets face it, not everyone eats the way that they should. For those who feel that they need a slab of meat to create a meal, warm them up to the idea of getting their protein without all of the saturated fats with a hearty stew! Besides the Ohio weather has been getting cooler its about time for the soups.

Now, I don't want to overwhelm you with a whole lot of recipes and info so I will part it to you in several posts so that you can read at your own leisure.

Ok, so on with the show...

White Bean Chili with Jalapeno Bulgur

This takes a total of 30 min total to prepare (YAY!)

1/2 cup bulgur wheat

1 Tb fresh lemon juice

2 scallions

1 jalapeno (sorry no tildes on the blog) seeded and chopped

2 Tb OO (doesn't have to be EVOO but that's always nice, btw OO=olive oil)

1 large onion chopped

1 green bell pepper chopped

2 cloves of garlic chopped

My New Favorite Quick and Healthy Meal: Sesame Peanut Noodles

This is currently my favorite go-to weeknight recipe. The sauce and vegetables require no cooking and can be prepared in the time it takes for the noodles to be prepared (including the time it takes for the water to come to a boil). Last night, I doubled the sauce recipe and have enough to use for tempeh dipping sticks tonight, which I'll serve with a thai-style slaw. I'd still love the recipe even if it took twice the time to prepare it, it is seriously delicious.

I used buckwheat soba noodles last night, and they were incredible...I highly recommend them for this recipe.

 

The Urban Farmers Market, This Saturday, Sept.26th, 9-1pm

The last Urban Farmers Market of the season is this Saturday, 1934 N. 4th St., 43201, 9am-1pm

Local Matters supports this event and the mission to bring more fresh, local foods to our community. A variety of vegetables, herbs and flowers were grown in the University Area. There were also be prepared foods from The Lucky Ladle, Patty Cake Bakery, Rad Dog and many others.

Live musical performances throughout the day to entertain us, while we eat.

The Veggie Van will also be there, Cooking Demonstrations and free tastings of locally grown foods...come join the fun and support the local food system while you are at it!

Why is our work so important?

• 1 in 3 children are expected to get type 2 diabetes in their lifetime.  If you’re African American of Hispanic, it’s 1 in 2 children.

• Children born starting in the year 2000 are predicted to have a shorter life span than their parents

• The inclusive cost of our Food is Elementary Curriculum is $160 per student per year for 28 lessons.  The cost of treating the chronic diseases associated with Type 2 diabetes is estimated to be $12,000-$14,000 per year.

• Many Columbus inner city neighborhoods lack access to local, fresh food.  In contrast, corner stores selling mostly cigarettes and booze and fast food restaurants flourish in these same places

CDC Headstart and Local Matters

CDC Headstart is taking leadership on providing nutrition education to Columbus area children and their families. This year Local Matters will be expanding our "Food is Elementary" curriculum to 4 CDC Headstart schools: Generations, Gtyree, Captial Park and the OSU Schoenbaum Center.  We launch our Fall Programming the week of Sept.14th and are thriled to get back in the classroom.
